Using up leftovers while still creating a tasty meal is tricky, especially on a budget. A good solution is to try a delicious mexican chicken recipe. Arroz con Pollo is not only quite economical but also it can be easily made using the available ingredients and also it is quite delicious. The preparation of the chicken for this dish is fairly simple, as only one pot is necessary, saving on clean up time, and if you begin with boneless skinless chicken the only thing which you must do to it is cut it into small chunks.

The ingredients needed are 200 grams of long grain white rice (use an excellent standard of rice to make it as good as possible) and one can of tomatoes. Good vegetables to have with chicken include zucchini, bell peppers and sweetcorn. The sweeter taste of red or yellow bell peppers will complement the chicken better than green. Butternut squash, although it’s not an ingredient unique to Mexico, is an effective ingredient in rice-based entrees.

I was hoping to find some good italian chicken recipes, since my boyfriend is Italian and always raves about the chicken his mother makes. My idea of an Italian chicken recipe is to throw some canned tomato sauce over a chicken breast. I just don’t think this will make him happy. Please don’t suggest something that is difficult, I am a completely inexperienced cook. Also, I am hoping for something that is marginally healthy, as I would like to be able to eat this as well without gaining five pounds in one sitting. I have a countertop grill, and a microwave. My stove oven is currently broken but the burners work.

(The over turns on but doesnt heat over 200 degrees, so I think it might not be safe to try and cook chicken in there. It doesn’t matter where we go to eat, she always orders chicken. I think curry can go in a lot of different foods but I’m going to be looking for a new indian chicken recipe that she might like, or maybe try that new Indian restaurant. I know she’ll order the chicken. Even though the research isn’t complete, it sounded very promising, and it can’t hurt.
